Happy Easter everyone!

(Well for all who celebrate)

For some of you today is full of spiritual wholeness. For others it's a day to dress up in your frilly, lace dresses, have egg hunts and eat lots of sweets!

Whichever one it is for you, I hope you all get lots of rest! I know I am! (Can you say no work until Tuesday! Holla!)

Oddly enough, as a kid I never cared for the Easter holiday.

Rabbits give me the creeps, and I hate candy. Yes even as a child I never liked candy.

I'm not diabetic who knows, it does run in the family.

I didn't go to church today, or dress up in a bright lace dress.

But I did make two delicious desserts that's sure to be sending my entire family to the gym soon!

(Gotta stay cute for swimsuit season!)

So today I'm sharing with you my cookie recipe, and tomorrow I'll be sharing my cake(s)!

The recipe was originally supposed to be a knot shaped cookie, but I am not very creative when it comes to dough. I gave up after probably only 3 minutes of trying and just made regular cookies. They still look lovely!

These babies are so delicious! I made a lot of changes to the original recipe, so it's pretty much my own now.

So here you guys go!

Easter Blue Almond Cookies

Ingredients

1 stick butter, softened

1 1/2 c sugar

3 eggs

2 Tbsp milk

1 tsp almond extract

1 tsp pure vanilla extract

4 c sifted flour

Directions

Cream butter and sugar. Add the eggs, milk, almond and vanilla.

Combine the sifted flour slowly to the wet mixture.

Grease cookie sheets. Arrange dough on sheet approximately 1/2" apart from one another.

Bake at 400 degrees for 8-20 minutes.(You do not want it golden brown. Just done enough so that a knife/toothpick stuck in the centre comes out clean). Allow to cool slightly. Drizzle icing and let dry.

To make icing, get your favourite flavour icing. (I used vanilla. It's best to use something white if you're using food colouring. If you're not using food colouring, then it doesn't really matter). Melt it in the microwave until it's in a smooth liquid form. Add food colouring of your choice. Stir. With spoon, drizzle onto cookies immediately. If you let the icing sit for too long, it will turn hard again.

And there you have it!
