Melt in Your Mouth Raspberry Scones

I know you must be wondering what's wrong with me.I assure you I have not lost my mind!If you've been following me, you know that my past fruit infused recipes have included either bananas, apples, or strawberries, like my Bite Sized Crescent Apple Pies, my Strawberry Banana Bundt Cake, even my Baked Oatmeal( That I've made on separate occasions with apples, strawberries and bananas).
But today I'm trying a new fruit, raspberries!Why?I had a bunch of raspberries in stock because I was trying a new recipe that didn't work out well at all!I don't think I'll ever try it again.It was supposed to be a sponge cake but came out more like a pancake.From the jump I knew it wouldn't end well.
So when I got the idea to make scones this morning, I decided this was the perfect opportunity to get rid of all of them.
(Raspberries would be awesome if they didn't have seeds.)
Ingredients·
3 cups all-purpose flour
· 1 teaspoon salt
· 2 tablespoons baking powder
· 1/3 cup sugar·
2 eggs·
1-1/2 cups heavy whipping cream
· 1 teaspoon pure vanilla extract
· 1-1/2 cups raspberries
· 1/4 cupEgg-Wash· 1 egg· 1 tablespoon water
Instructions
· Preheat oven to 425.
· Line baking sheet with foil and grease with baking spray; set aside.
· In a large mixing bowl, whisk together flour, salt and baking powder.
· Stir in sugar.
· In a separate bowl, whisk together 2 eggs, cream, and vanilla; mix until thoroughly combined.
· Stir cream mixture into flour mixture and mix only until combined. Do not overmix.·
Fold in the raspberries.
· Flour your work area and turn out the dough.
· Sprinkle dough with more flour.
· Divide dough into 3 portions.
· Pat down each portion of dough to about a 6-inch round.
· Place on previously prepared baking sheet.
· Cut each round of dough into quarters.
Make egg wash
· In a small bowl, combine 1 egg and 1 tablespoon water; whisk until combined.· Brush each scone with egg wash.
· Sprinkle with sugar.
· Bake for 11 to 14 minutes, or until golden brown.
When these are warm, try spreading plain cream cheese on a piece before taking a bite!OH MY!
