Vegan Fresh Fruit Popsicles

Something about my new church leaves me feeling energised at the beginning of every week! I start to feel like nothing is impossible (although the scientist in me is realistic about certain things; like I will never be double-jointed or I will never be able to eat dairy without curling into a ball and waiting for death). I hope to paint my room a new colour soon, and make a few other cosmetic changes to it. So one of the things I felt compelled to do with this new found energy is this new recipe!

Last month, I bought some popsicle molds and now I've finally used them! Due to my lactose intolerance, I found a vegan alternative to using yoghurt: Coconut Milk. Can you believe a tub of that stuff is only $1.09 at my local fresh market? Even though I hate coconut everything (yes I know I live on an island), I decided that this would be a healthier alterntive and perfect for my diabetic step father. He loved it, and I'm sure all will be gone by the end of the week (along with yesterday's ice cream that I can't wait to dig into).

Vegan Fresh Fruit Pops

Ingredients:

  • 2 large ripe bananas

  • 1 cup mixed fruit (I used strawberries, blueberries and mango)

  • 1 1/4 cup coconut milk

Directions:

  • Blend all ingredients together

  • Pour out into Popsicle molds (For me I was able to make 8)

  • Freeze 4-6 hours or overnight
