Strawberry Apple Puff Pastry

Have you ever noticed that the older you get, the worse you get at something? For me that's time management. I used to be such an orderely person; always on time, knowing everyone else's schedule and reminding them to keep them on time. Now I'm lucky if I remember my own commitments. I'll get up with a little over an hour to prepare and be where I'm supposed to be, and still expet to be able to make a gourmet meal in time. But thanks to shortcuts, sometimes, I'm able to make it happen. Especially when the friend you're metting doesn't mind you being late because she's running later herself.
The only real time killer on tis recipe is the defrosting part. And if it's cold where you are, defrosting can take a pretty long time. I cheated by using the defrost feautre on my microwave for about a minute so that I wouldn't be waiting forever. So if you've got 40 minutes and a toaster oven that'll automatically turn off when it's done, you can do this and still be on time!
Strawberry Apple Puff Pastry

Prep time: 20 min Bake time: 20 min
Ingredients:
1 sheet puff pastry
2 strawberries
1 small apples
2 tablespoons brown sugar
1 egg for egg wash
a dash of confectionery or powdered sugar (for serving)
I used Pepperidge Farms puff pastries. I thought it was going to be a pastry sheet but they were individual puff pastries in cute little ciricles like so:

1) Preheat oven to 415. Defrost 1 sheet of puff pastry for about 40 minutes until just soft (Or monitor it on defrost n the microwave. Approximately one minute was enough for me). Don’t let puff pastry sheet get too warm and put it in the refrigerator if you’re not using it right away after 40 minutes of defrosting.
2) Core and peel apples, slice them thinly. Section strawberries and slice them thinly.
3) In a bowl with apples, add 2 tablespoons brown sugar and let sliced apples sit for 2-5 minutes to get all juicy.
4) Line baking sheet with parchment paper. You don’t have to grease parchment paper.
5) Beat 1 egg in a small bowl until well blended. Brush puff pastry sheet with egg wash, especially the edges. Line apple slices and strawberry slices in a straight line along the puff pastry sheet. Make sure not to fill the whole space of puff pastry, so that you have extra space around the edges for puff.
6) Bake for 20 minutes until pastry puffs up along the edges. To serve, sprinkle with sifted powdered sugar.
These puff pastries are so sweet and soft, yet flaky! You can't have just one! The fruits caramelise into the pastry itself so every bite is full of flavour. You'll love it, trust me! Skip the calorie counting in this one. It's the weekend, you deserve it!
