Skinny Doughnuts with Vanilla Almond Glaze

Last night, my best friend Amanda, who surprised me for my birthday had a small get together by her house. My contribution was doughnuts and alcohol. I brought over a bottle of champagne, gin, a cupcake martini mix, and vodka. We had a great time talking about the old days, current events and dancing to Soca music. Even better than the company and drinks; were my doughnuts! I promise I’m not tooting my own horn here! I think I’ve mentioned before how much I love doughnuts. I love a doughnut like a fat kid loves kid. Like I really just need to hear the word doughnut and my stomach starts growling. I can’t drive past Dunkin Donuts without seriously considering purchasing a doughnut. But can you believe they cost $1.89 per doughnut over here?! There is no way I’m paying that. So now that I have my own doughnut pan, I can have unlimited doughnuts on demand! And I won’t have to feel guilty because it’s actually somewhat healthy. Not only are these doughnuts baked, not fried, but I adapted the recipe from Mom on Timeout, and I think from now own this will be my go-to recipe for doughnuts. The only real difference will be the icing. I went for something simple last night, but I’ve got plans for breakfast in the morning. These doughnuts are sweet, soft and low-fat! To save on calories you can forgo the icing. Can you really ask for anything more in a doughnut? Comfort food without the bulge? Yes please!
Skinny Doughnuts with Vanilla Almond Glaze

Prep Time: 15 minutes
Cook Time: 10-12 minutes
Total Time: 25-30 minutes
Serves 6 doughnuts
Ingredients
Donuts
1 cup all purpose flour
1 tsp baking powder
¼ cup granulated sugar
¼ cup brown sugar
¼ tsp ground nutmeg
¼ cup plain low-fat/non-fat yogurt
3 tbsp almond milk
1 tbsp cinnamon applesauce
½ tsp vanilla extract
Glaze
1 tbsp vanilla icing (any brand)
1 tsp almond extract
Directions
Donuts
1. Preheat oven to 325F.
2. Combine flour, baking powder, sugars, and nutmeg in a small bowl.
3. In a medium bowl, beat together yogurt, milk, applesauce, and vanilla, and together until thoroughly combined/
4. Stir in flour mixture just until incorporated.
5. Spray a donut pan with cooking spray.
6. Pour batter into the pan, careful not to cover the holes.
7. Place in the oven and bake for 10-12 minutes or until tops of donuts spring back at your touch. They will not brown on top.
8. Remove from the oven and let rest for several minutes before removing from pan.
Glaze
1. While the donuts are baking, prepare the glaze. Whisk together the icing and almond extract until no lumps remain. It may help to melt the icing in a ramekin first, then add the extract and stir.
2. Drizzle glaze over the tops of donuts and serve.
