Strawberry Shortcake Doughnuts

Before I started this recipe, I had no idea what Shortcake was. I had heard about it, but I had no idea if I had eaten or even seen one in person before. I still don't recall eating shortcake in the past but at least I know what it is now. Shortcake is a sweet cake or biscuit (in the American sense: that is, a crumbly bread that has been leavened with baking powder or baking soda). To me, it’s made essentially the same way as regular cakes other than with shortcakes, the dough is dropped in spoonfuls onto a baking sheet, rolled and cut like baking powder biscuits, or poured into a cake pan, depending on how wet the dough is and the baker's preferences. And strawberry is the most common variety of shortcake!
As you all know, I just recently got a doughnut pan and I am going to abuse this! I recently made Skinny Doughnuts with Vanilla Almond Glaze so today I used the same recipe but changed the topping. This recipe works great for breakfast or dessert. And it probably makes an even better party treat than my last donuts because they’re so colourful and fun to eat! The cool whip topping is a surprising refresher. You don’t have to wait until summertime to eat this fruity treat! Strawberry Shortcake Doughnuts

Prep Time: 25 minutes
Cook Time: 10-12 minutes
Total Time: 35-40 minutes
Serves 6 doughnuts
Ingredients
Donuts
1 cup all-purpose flour
1 tsp baking powder
¼ cup granulated sugar
¼ cup brown sugar
¼ tsp ground nutmeg
¼ cup plain low-fat/non-fat yogurt
3 tbsp almond milk
1 tbsp cinnamon applesauce
½ tsp vanilla extract
Topping
2 strawberries sliced in three thin slices each
6 tbsps whipped topping
Directions
Donuts
1. Preheat oven to 325F.
2. Combine flour, baking powder, sugars, and nutmeg in a small bowl.
3. In a medium bowl, beat together yogurt, milk, applesauce, and vanilla, and together until thoroughly combined/
4. Stir in flour mixture just until incorporated.
5. Spray a donut pan with cooking spray.
6. Pour batter into the pan, careful not to cover the holes.
7. Place in the oven and bake for 10-12 minutes or until tops of donuts spring back at your touch. They will not brown on top.
8. Remove from the oven and let rest for several minutes before removing from pan.
Topping
Scoop one tablespoon each into the centre of each doughnut.
Place each strawberry slice in the centre and serve immediately. Store in cold fridge until ready to eat again.
