Blueberry Oatmeal Donuts

Hi friends!
Wow this was a crazy weekend! Our island suffered two massive island wide power outages that left people without any electicity for a minimum of 4 hours at a time.
What made it worse is that I had a huge project for school that I spent much time stressing over. Atone point I was positive I was actually having a mental breakdown. Thank goodness my friend's husband talked me down off of that metaphorical bridge. He actually sat down with me and helped me to somewhat figure out what track I was supposed to be on. I'm super grateful to him for that.
So to celebrate, I cleaned my room (more like just put away my clothes, there's still A LOT of cleaning left) and I made donuts for breakfast! This is my second breakfast donut.
Because I am rocking a mini donut pan, my donuts are tiny, and I was left with a lot of batter. So I put it to use in muffin tins. Why let a good thing go to waste? Believe me, fibre never tasted so good, unless you add chocolate because, you know, you're into that sort of thing.

Blueberry Oatmeal Donuts
INGREDIENTS:
2 cups rolled oats
1 1/2 cups almond milk
1 1/2 cups flour
1 tbsp baking powder
1/2 cup light brown sugar
1/2 cup cinnamon applesauce
1 tsp vanilla
3/4 cup fresh blueberries
INSTRUCTIONS:
1. Preheat oven to 400F. Grease your donut pans with a non-stick spray.
2. Mix oats and milk in a medium-sized bowl. In a large bowl, mix together the dry ingredients, making a well in the centre. Stir in the liquid ingredients and the oatmeal mixture until just combined. Be careful not to over mix!
3. Fill donut moulds to the top, and bake for 16-18 minutes until golden brown. Do not over bake!
4. Let cool and enjoy!

You guys should totally try this and give breakfast a cool new look! Pair with tea, coffee, juice, whatever your morning drink is.
