Yay! It's Monday!
Hi evereyone! It's not so much Monday that I'm exicted about. It's the fact that tomorrow is Tuesday, which means that in exactly one week...well....I'll save that for later!
Did you guys have a great weekend? My was rather relaxing. I was finally able to go dancing with my friends, I attended a concert at church on Saturday, and watched movies yesterday. I'm even improving immensely in my pole dancing class. Everything was going well until I got a message on Facebook, from my ex boyfriend's, ex girlfriend. I know it sounds messy, but try to stay with me.
She offered to give me some pointers when taking photos of my outfits. I wouldn't mind accepting help. but when you approach me as if I'm a complete disaster waiting to fail, I have a few reservations. To begin with, we're not really "friends", more like acquaintences. Nothing personal, it's just we've never hung out. And it really doesn't help that the first time she asks me to hang out, is to criticise me. Not that I can't take criticism, but the source of criticism should also be taken into consideration. She doesn't know much about my brand, and just inserted herself like she was the messiah of fashion photography, sent to save me from losing all of my followers. I really don't have any hard feelings against her; I was just a little offended by her approach.
If you read my blog on a regular, you would know that I don't do this for anyone's approval. If I didn't write about the amazing things I did, I wouldn't be less likely to do amazing things. I choose to share certain parts of my life as I find it rather therapeutic. Even if at the end of the day, I'm just talking to a computer screen.
But enough about that. I got up at 5:40 am this morning (thank you snooze) to make these muffins. I think I'll dub today Muffin Monday, since I made muffins last week Monday as well (with my leftover donut batter)! It's kinda catchy right? At some point I'll actually do something for Meatless Monday as well. But today, it's all about the muffins!
You all know I take my sweets, healthy! There's no butter, but full flavour! (I can't believe people still insist on using butter). What I love (and hopefully you too) about these muffins, apart from how incredibly moist they are, is that you get a moutful of apple chunks in every bite! It's like an apple pie, in a muffin tin! It may not seem that innovative to you, but you can't deny how good these taste! They're easy to make, so you've gotta try it!

Apple Streusel Muffins
Ingredients
3 Tbs cinnamon applesauce
1 cup plain nonfat yogurt
1 1/2 tsp vanilla extract
1/3 cup milk
2 cups flour (use any healthy flour of your choice)
1/2 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1 1/2 cups apples: peeled, cored, and chopped in varying sizes from small - medium
1/2 cup uncooked oats for topping
1/4 cup melted vanilla icing for glaze
Instructions
Preheat Oven to 400F degrees. Spray a 12 cup muffin pan with cooking spray or line with paper liners, set aside.
In a medium bowl, combine all ingredients except the apples, oats and icing until just smooth. Gently fold in the apples. Spoon batter into prepared muffin pan, filling each cup 2/3 full. Top each muffin with 1 tsp of the oats. The oats make for a healthy topping with a similar consistency and texture of streusel. Bake for 18 minutes or until a toothpick inserted into the center comes out clean.
Remove the muffins from the pan and allow them to cool on a wire rack. Melt vanilla icing in a microwave, then drizzle over the muffins. Serve immediately and enjoy with your favourite cup of coffee or tea!
