Green Eggs & Ham

Hi friends!

I know that today is supposed to be Thirsty Thursdays but a random spirit hit me (so to speak) and I decided to make green eggs and ham for breakfast. You didn't think I'd let the entire month of March go by without making a single green themed food item, did you? Here's how that happened.

I got an email from Chef Steps with a video tutorial on how to make this childhood fantasy come to life! To be completely honest, I didn't actually read the famed book until my teen years while babysitting my cousin. I know, that's terrible! I don't know how I went half of my life without reading any of Dr. Seuss' great works. But thank goodness for babies, right?

It's amazing that he wrote this book entirely on a dare that he couldn't write a book using only 50 words. And this piece of literature is still celebrated today. I didn't get nearly as fancy as the recipe (which college student do you know has easy access to duck eggs and time to shred ham?) Also I hate peas, and had to use the green beans because Avocados aren't in season. I also didn't have ham but had turkey breast, so I used that as a substitute. But I think I did a good job nonetheless. This recipe has the potential to be vegan depending on how you make it.

Green Eggs & Ham

A green bean puree brings brightness and whimsy to a dish that’s delightfully simple to prepare.

Ingredients:

  • 2 slices toast bread

  • 1 lb green vegetable (such as peas or green beans, fully cooked)

  • 1 teaspoon melted butter

  • 2 fried eggs (I used egg whites because I'm lactose intolerant)

  • 2 slices fat free turkey breast

  • 1-2 slice(s) cheddar cheese (feel free to use veggie cheese to make it vegan)

  • 2 slices tomatoes

  • Various seasonings to suit your taste

Directions:

  1. Cook your green vegetable according to packaging directions. Then puree in food processor until smooth with the melted butter, and any seasonings you choose to use. I used garlic and pepper and italian seasonings.

  2. After toasting the bread, spread your vegetable puree on your slices. (if you choose to add cheese and tomatoes, place on top of the puree.

  3. Cook the turkey breast (or ham if you have it) in a nonstick pan. Place on top of your puree on the toast.

  4. Fry your eggs as your like in a nonstick pan, then place on top your puree, turkey, cheese and tomatoes.

  5. Serve with a glass of iced tea, and enjoy while reading Dr. Seuss' classic!
