Spiced Apple Waffles

I've recently become addicted to the Thug Kitchen cookbook, as you guys saw in my Maple Berry Grits and Moroccan Spiced Couscous recipe. And you all know how breakfast is my favourite meal of the day! So today, I decided to try their spiced apple waffles. Let me tell you, this was a little of a struggle. My waffle iron sucks. And when I say, sucks, I mean SUCKS! I have to use something to keep it somewhat open because once it locks, I can't get it back open. And my waffles always come out really chewy (kind of gummy like). I know it's the iron's fault because I could use the same batter in the pan to make pancakes and their not gummy. So at some point, I'm going to invest in a better waffle iron. Maybe when I get my own place to hold the size of a decent waffle iron. But for now, I'll enjoy my moist, but gummy waffles.
This recipe is awesome because it allows you to sneak some fruit into your sweet breakfast treat that you don't have to feel guilty about. So instead of spending money on crappy frozen waffles from the store that's full of God knows what, try making your own waffles for breakfast today. You'll love it!

SPICED APPLE WAFFLES
Makes about 6 big waffles but it varies depending on your waffle maker.
Ingredients:
2 ¼ cups of your favorite non dairy milk*
1 teaspoon apple cider vinegar or lemon juice
2 ½ cups all-purpose or whole wheat flour
1 tablespoon baking powder
¼ teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 cup grated fresh apple, skin on**
4 tablespoons brown sugar
2 tablespoon of oil***
spray oil of some kind
Directions:
Warm up the waffle iron. Don’t have a waffle iron? Well just how in the world did you plan on making this recipe? Go borrow one and get back in the kitchen.
Mix together the milk and vinegar in a small glass and set it aside.
In a large bowl whisk together the flour, baking powder, salt, and spices so that they’re all mixed up. In a small bowl, toss together the sugar and grated apple. Set it aside.
Make a well in the center of the flour mixture and add the oil and milk. Whisk everything together until there aren’t anymore dry spots and only a few lumps. Fold in the apples and sugar until it’s just combined. Be careful not to over mix or you’ll be eating awful waffles for breakfast.
Spray the warmed up waffle iron with some nonstick spray so they won’t stick then pour in some batter. Cook until golden brown and crispy according to your waffle maker’s directions. Cover with your favorite waffle topping like syrup etc.(I used whipped topping) and serve hot.
* Almond is awesome but use whatever you want.
** This is about 1 large apple grated on your cheese grater. Use a kind of apple that you would actually eat, it’s alright be picky with your fruit. But I took the skin off.
*** Grape seed or olive would work. Use whatever you got.
I totally enjoyed these and didn't even actually taste the apple but it was in there. Spice up your breakfast today!
