Easy Raspberry Chocolate Cheesecake

Hi Wednesday!

We're so happy to see you because that means we're halfway there!

I actually forgot that it was Wednesday when I was getting ready this morning (really thought it was Tuesday) and ended up calling my boyfriend to wake him up for work. Funny thing is today is his day off. So I'm glad he was a good sport about it. Sorry hun!

I don't know how I could forget that today was Wednesday because yesterday (Tuesday) I went to see Avengers: Age of Ultron with my dad! And......................IT WAS AWESOME!!!!! (maybe that's why I thought it was Tuesday; so I could relive that awesomeness). It was like every comic book nerd's fantasy in one gigantic, colossal, action packed, hallelujah for Chris Hemsworth and those golden locks and Australian accent, movie! From the beginning to the end, I was not disappointed! I would actually watch that again (and I usually hate watching movies more than once). And thank you internet for not giving away any spoilers so I won't give any spoilers, just know that if you haven't seen it already, GO! Don't bootleg it, physically go into a movie theatre and watch it! It will completely make you forget that you just spent $10 on a movie ticket (more if you bring a date).

And can you believe, just as we were at the end of the movie, the power went out? Literally, the last minute of the movie. We thought they would roll it back for us, but nope. The video never went away but there was no audio. So thanks Galleria, I got to practice reading lips. Galleria cinemas does not care about black people.

Okay, I'll stop now.

So if you need something to take your mind off of something frustrating, take a gander at this!

At the potluck dinner, I made my very first cheesecake. Oh sure I've used cream cheese in MANY recipes, but I'v e just never made a cheesecake. (Except for that one time in college that we'll never speak out). I was supposed to top it with strawberries and powdered sugar but I totally forgot as I was rushing out of this house. Despite that, everyone loved this cheesecake (as it only lasted for that night) and once I share this recipe, I think you will too! I dare you to stop at one slice! (I kind of wish I had another slice of this right now).

Easy Raspberry Chocolate Cheesecake

Ingredients:

  • 1 standard pie crust, homemade or store bought *see notes (I used a store bought crust)

  • 16oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 2 Tbsp heavy cream (or half n half)

  • 1/4 tsp salt

  • 2 tsps vanilla extract

  • 1/2 packet Land O Lakes Raspberry Chocolate Cocoa Mix

  • 1 egg

  • 12oz fresh Driscoll's strawberries

  • Powdered sugar, for dusting

Directions:
  1. Preheat oven to 350°F.

  2. If making your own crust: Lightly grease a 14x5-inch rectangular tart pan, with removable bottom. Roll out pie crust to fit pan. Press into pan, use a fork to prick entire surface of dough. Bake for 20 minutes.

  3. Meanwhile, in a large bowl, beat cream cheese and cocoa powder until completely smooth. Mix in sugar, salt and vanilla, followed by heavy cream. Finally, mix in egg. Beat only until batter is just combined.

  4. Remove crust from oven and reduce oven temperature to 325°F.

  5. Spread filling into an even layer in pre-baked crust. Bake for 20 minutes or until center is set.

  6. Cool on a wire rack until cheesecake is room temperature. Transfer to refrigerator to chill completely. Top off with strawberries and sust with powdered sugar just before serving.

  7. Store in the refrigerator.

  8. *Pie crust needed is equivalent to crust for a standard 9-inch pie

Save room for dessert because this pie is awesome! In fact, I think the only thing more awesome than this pie is the Avengers: Age of Ultron, in theatres now! And once you're done with that, enjoy the rest of your hump day with a slice of this!
