Raspberry Chocolate Parfaits

Have you ever started a recipe and it just fell apart? Well that's what happened with this one. It started out with the noblest of intentions of being a remake of that awesome cheesecake I made on Friday so that my mum could taste it, but forces beyond my control had different plans. This post is all about turning a failure into a sucess.

When I opened up my first pie crust (yes there was more than one) I actually found a worm in it. I was so upset! It was ten o'clock at night on Mother's Day Eve (not sure if that's a real name but let's just roll with it) so the store was closed. I had to wait for it to open at 7 am the following day and risk ruining the surprise for my mum.

So morning came and I went back to the store, prepared to give these people a serious tongue lashing (and the video of the worm on my phone as prood that I wasn't crazy). When I got there, all of the graham crusts were gone (I guess someone tipped them off) and only chocolate crusts were left. So I exchanged for the chocolate crust even though it costs 50 cents more and went home with a renewed spirit. But when I got home. I tilted the pan slightly and the entire crust crumbled. Just completely fell apart. Well I was heartbroken. I had a bowl full of cheesecake filling, using the same recipe as last time and nowhere to put it. I cried and screamed in despair (seriously not overexaggerating) so my mum eventually figured out what I was trying to do, and we both agreed to give up. It sucked not being able to give her the cheesecake but at least she was happy with the waffles.

I kept trying to think of a way to save it but nothing was clicking. After we came from church, it's like a lightbulb went off inside of my head and I realised, instead of letting the crust go to waste, I could layer it with the cream cheese filling and make a parfait! And would you know it worked? (Of course it worked or I wouldn't be writing this post)

So using the same recipe for the Raspberry Chocolate Cheesecake, make sure your crust is nothing but crumbs. Get a clean glass and start with a bottom layer of the chocolate crust. Alternate until the glass is full and the top layer is the cheesecake filling. Let sit in the fridge for about three to four hours and eat during your favourite show's season finale. For my mum that was the series finale of Revenge (she still can't accept that it's over) and for me that was the season finale of Bates Motel (haha, my show is still on the air).
