No Churn Coffee Ice Cream

I love coffee! I drink it daily. I’m one of those people that doesn't believe in decaf. Yuck! Remember that time I made Coffee Pancakes?! And learned the hard way that coffee and bananas aren't the best combination? And who can forget that awesome Vanilla Almond Coffee Smoothie? I LOVE COFFEE! I 've started making it cold because it's just too hot for hot coffee. I've had a lot of fun playing with the flavours, like that time I made mint flavoured iced coffee. It was okay but not quite my cup of....well coffee. But I’m always looking for ways to incorporate the flavor into my desserts. And this one, did not disappoint!

(If you are sensitive to caffeine or plan to serve the ice cream to kids, you can make it with decaffeinated coffee.)

No Churn Coffee Ice Cream

Total time: 6 hours 15 mins

Yields: 3 PINTS

The smoothest ice cream made without an ice cream maker and only 3 ingredients! Coffee flavored ice cream is great for a summer afternoon pick me up. You will not believe how simple this delightful coffee ice cream is!

INGREDIENTS

  • ½ cup strong brewed coffee, cold

  • 1 (14 ounce) can sweetened condensed milk

  • 2 cups heavy cream

INSTRUCTIONS

  • Combine the condensed milk and coffee in a small bowl. Whisk until smooth. Add the heavy cream to a large bowl. Using an electric mixer set to medium speed, beat until stiff peaks form. Turn the speed to low and slowly pour in the condensed milk and coffee mixture. Turn the speed back up to medium and beat until thickened. Transfer to a freezer safe container and freeze for at least 6 hours.

Everyone in my family loved this ice cream! I plan on making it again with a little something special next time, so stay tuned!
