Upside Down Strawberry Peach Muffins

So I still have a bit of an obsession with watching cooking shows when I come home from work. Working at a school has it's perks but unfortunately, now that school is starting soon, my summer hours are changing back to regular hours so I won't get home in time to watch my favourite shows any more.
Guess I'll just have to keep up via the website.
During my week vacation, I found this recipe on the Best Recipes Ever website.

So this morning's recipe is adapted from Best Recipes Ever.
My mouth watered when I first saw the recipe, and I hope yours did too when you saw this post!
It's so moist and sweet and delicious!
My mum has already said that she wants me to make this again at the end of the month for her office birthday celebration.

Ingredients:
2 cups (500 mL) all-purpose flour 1/2 cup (125 mL) packed brown sugar 1 tbsp (15 mL) baking powder 1/2 tsp (2 mL) baking soda1 cup (250 mL) milk 1/2 cup (125 mL) applesauce 1 egg 1 tsp (5 mL) vanilla
Topping: 1 peach 1/2 cup (125 mL) packed brown sugar 1 cup (250 mL) diced strawberries 1 tsp (5 mL) cinnamon 2 tsp (10 mL) unsalted butter, melted
Preparation:
Grease nonstick muffin cups. Line bottoms with circle of parchment or waxed paper. Set aside.
Topping: Peel, core and cut peach into 1/2-inch (1 cm) dice; place in bowl. Stir in sugar, strawberries and cinnamon.
In skillet, coat with non-stick spray over medium heat; cook pear mixture, stirring, until pears are tender, about 5 minutes. Divide among prepared muffin cups. Set aside.
In bowl, whisk together flour, sugar, baking powder, baking soda. In separate bowl, whisk together milk, applesauce, egg and vanilla; add to dry ingredients and stir just until moistened. Spoon over each topping.
Bake in centre of 375 degrees F (190 degrees C) oven for about 20 minutes or until tester inserted in centre comes out clean. Let cool on rack for 10 minutes. Invert onto baking sheet. Serve topping side up.
Servings: 12

Serve with a side of scrambled eggs and or bacon and a nice fresh fruit smoothie!
(I combined two bananas, 4 strawberries and 2 cups of Dole Orange Peach Mango Juice)
