Basic Stuffed French Toast

It's so hard to not have a laptop.As you all know, my laptop along with a few other precious items were stolen, so I'm stuck waiting until I get to work to post about all the wonderful things I've been up to. (Like getting into Fash Art this year! But more on that in tomorrow's post).

This past weekend, I made a new blouse, decorated my new phone case, made breakfast, and fell in love with overly priced fabric that I'll never be able to afford.Seriously? $20 a yard? Does that thing sew itself?!Dreams just flying out the window on that one.

But today I'm going to give you something to dream about (and hopefully try).Ever since IHOP emailed me about their new Stuffed French Toast, I said to myself, now that I need to try!

And when I found out how easy it is to do, I was in heaven!Now I didn't let my sweet tooth get the best of me this time. But next time, WATCH OUT!

While you can use anything, cream cheese is the most popular filling. Fruit pastry filling or chopped nuts can be added to the cream cheese or the cream cheese can be topped with fruit.

You will not believe how easy this recipe is to do! If you can make a sandwich, you can make stuffed French toast. In fact, it’s exactly what you're doing: making a sandwich!^.^

Ingredients

8 slices sliced bread (slices should be close to 1-inch thick)

8 ounces cream cheese

1/4 cup sugar

1/2 tablespoon ground cinnamon

3/4 cup soy milk

3 whole eggs

2 teaspoons pure vanilla extract

2 cups strawberries, mixed berries (fruit topping of your choice)

powdered sugar (optional)

Maple syrup (optional)

Instructions:

Preheat oven to 350.

Grease a 8x8 baking dish with non-fat cooking spray; set aside.

In a mixing bowl, combine cream cheese, sugar, and ground cinnamon; mix until thoroughly combined.

Spread cheese mixture onto each slice of bread.

Place 4 bread slices, cheese-side up, in prepared baking dish.Cover with remaining bread slices, cheese-side down.

In a large mixing bowl, whisk together milk, eggs, and vanilla until blended.Pour over bread.Bake for 10 to 15 minutes, or until center is set and top is golden brown.

Let cool for 10 minutes.

Top with berries and powdered sugar and/or maple syrup.

Serve.
