3 Minute Microwavable Apple Cinnamon Crumble

It's officially Fall!
So excuse me as I shake out all of my animal print and boots!
Fall used to be my favourite season until I realised that The Bahamas is far too hot for most fall fashion (at least all the cool stuff, like faux fur, and scarves).
So my closet is filled up with bright pastels instead.
(But I still held on to a lot of my funky prints)
Another reason I love Fall is the excuse to consume Pumpkin anything until I explode!
So I will be hitting up Dunkin Donuts as soon as those flavours come out!
Until then, I'm going to make delicious desserts like this one right here!
It's coarse appearance reminds me of harvest time and sweet nature makes me feel all warm inside! And it's super quick and easy to make! Not to mention you'll save tons on your light/gas bill (depending on what kind of stove, oven combination you have) because this recipe is cooked in the microwave. That's right, you heard me! A microwavable dessert!
Somewhere I think a stressed out mother just raised her hands, sang a hallelujah chorus and possibly attempted a back flip.
Okay maybe not the back flip, but you get the point.
I'm talking about a 3 Minute Microwavable dessert the whole family will love!
And if you have a sweet tooth in the morning, this can work for breakfast too (because of the oats).
I promise you, this is one recipe you definitely need to try at least once this Fall.
And the ingredients are super easy to come by!

INGREDIENTS:
Crumble Topping
2 tablespoons margarine (or other butter substitute)
2 tablespoons light brown sugar, packed
2 tablespoons quick cook oats
2 tablespoons wheat flour
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
Apple Base Layer
1 medium/large apple, diced in about 1/4-inch cubes (I did not peel mine, peel if you wish; I used Fuji, use any variety you like)
1/2 tablespoon margarine (or other butter substitute)
2 tablespoons light brown sugar, packed
1 tablespoon granulated sugar
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
optionally add pinches ground ginger, pumpkin pie spice, cloves, allspice based on taste preference
whipped cream or ice cream, optional (but recommended) for serving
DIRECTIONS:
For the Crumble Topping - In a small bowl, combine all crumble topping ingredients and stir together with a fork until small pebbles and sandy crumbs form; set aside.
For the Apple Base Layer - In a small to medium-sized microwave-safe bowl or baking dish, add apples and top with margarine. Don't use an overly shallow dish because the apples will release juices, the butter melts, and it will rise and puff in the microwave, and it will overflow if bowl is too shallow. Cook for 1 minute on high power to soften apples (or longer if you want the apples to be really soft).
Remove bowl from microwave. Coat evenly with crumble topping. Do not mix topping with base layer.
Cook for about 2 minutes on high power, until juicy, bubbly, and topping is set. Due to variance in microwaves, climate, apples and their variable moisture content, cooking times could range from 1 1/2 minutes to slightly over 2 minutes. Start watching it carefully at 1 1/2 minutes and stop cooking when done. Serve immediately. Optionally serve with whipped cream or ice cream. Crumble is best warm and fresh, but leftover portion will keep airtight for up to 3 days.
