French Toast Waffles

At 8:44 p.m. last night, I lost my favourite grand aunt.
She spent the past month in hospital. Her death wasn't exactly peaceful and I'm not exactly okay with it.
So I'm taking a day to grieve and focus on assignments I have due this weekend.
Whenever I'm feeling down, I like to try new recipes.
So this morning, I thought I'd give French Toast Waffles a try.
Can I say that I totally suck and making the conventional French Toast in a skillet?
Honestly it comes out more like soggy bread with fried egg on it.
So when I tried my Stuffed French Toast last year and French Toast Muffins, I figured that's what I'm good at. Variations on French Toast.
This recipe is pretty easy (and as you can see, looks oh so good)!
Psst! There's rum in this recipe!
Yield: 2 servings
(2 waffles per person)
Ingredients:
1 cup vanilla almond milk
1 Tablespoon granulated sugar
1 Tablespoon gold rum (I used Bakhara, Haitian Rhum)
1/2 teaspoon ground cinnamon
2 large eggs
4 slices wheat bread
Directions:
1. Combine milk, sugar, rum, cinnamon and eggs- stirring well with a whisk. Place bread in a 13x9-inch baking dish; pour milk mixture over bread, turning to coat. Let stand 5 minutes.
2. Preheat waffle iron and then coat with cooking spray (even if it's a nonstick waffle iron).
3. Place as many bread slices as can fit on hot waffle iron. Cook 3 to 5 minutes or until golden brown. Repeat the procedure with the remaining bread.
