Chewy Rum Sugar Cookies

I'm so excited for Christmas! It really is my favourite time of year. Mistletoe, trees, lights, baked goods! Everyone likes to say don't forget the reason for the season, and I agree to an extent. We are celebrating Jesus' birth and out of everything I just listed, Family really is what's most important during this time of year. We often get so caught up in having the perfect Christmas that we overlook all the little things that really make Christmas perfect! For me that's traditions with my family. We would always go to Christmas Eve mass, then come home, open one present each, and then go to bed. Now that I'm older, the traditions aren't as strong. So I guess once I start my own family, it's up to me to carry on these traditions.

One of the traditions I wish we had around Christmas time was baking. I love baking so much! Who doesn't love coming home to the smell of pine and sweets? Speaking of pine, we bought our tree today!

It hasn't been decorated yet, but I can't wait to finish decorating the house this week!

CHEWY RUM SUGAR COOKIES

These cookies are super sweet and the flavour is only enhanced by the rum. I promise they won't get you drunk. So the kiddies can enjoy it too!

Ingredients

  • 2 ¾ cups Aunt Jemima pancake mix

  • 1 cup applesauce

  • 1 egg

  • 2 teaspoons Bacardi Oak Spiced Rum

  • Sprinkles (optional)

Directions

1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Or spray Themed Cookie Baking Pan with non-stick spray

2. In a small bowl, mix pancake mix and sugar. Set aside.

3. Using a mixer, beat together the applesauce, egg and rum until smooth and very fluffy.

4. Gradually blend in the rest of the dry ingredients. Make sure your mixing thoroughly.

5. Pour batter onto lined cookie sheets about 1 1/2 inches apart and top with coloured sugar.

Or pour into themed cookie baking pans

6. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
