Coffee Pancakes

No, not coffee with pancakes. I'm talking, Coffee-infused Pancakes

Okay.

I know sometimes I go over the top with some of my recipes, but you've gotta try this one. It's no secret that I LOOOOOOOOOOOVE coffee (my dad got me three bags of Dunkin Donuts coffee as a Christmas present). But after my doctor told me to cut back (I'm amazed at how well I'm doing) I'm successfully down to three cups a week maximum. And when I say cup, I actually mean cup; no giant mugs.

And ever since taking over breakfast, there has been one breakfast item I've been dying to do: Pancakes. Don't get me wrong, I know how to make pancakes. But they're time consuming and I like my sleep. So I've opted for recipes that take no more than 20 minutes of my time. But today, I said, "Screw punctuality, I want pancakes darnit." But I didn't want regular plain pancakes. If I was going to risk being late for work just to make breakfast, it had to be something spectacular. So I figured, why not combine two of my greatest loves: Coffee and pancakes. I adapted this recipe from, Eat, Live, Run. Even better, I substituted Decaf for regular coffee so I get that full coffee flavour without the adverse side effects of too much caffeine.

Coffee Pancakes

Ingredients:

1 cup all purpose flour

1/2 cup sugar

1 tsp baking powder

1 tsp baking soda

1 cup almond milk

2 tbsp instant coffee granules (decaf works fine if you need to cut back on caffeine)

1 tbsp plain applesauce

Directions:

In a medium bowl, combine the flour, sugar, baking powder, and baking soda.

In a measuring cup (or small bowl), combine the almond milk, instant coffee granules and applesauce. Mix until well combined and coffee granules have dissolved.

Pour the wet ingredients into the bowl with the dry ingredients. Mix until just combined (batter will still be slightly lumpy – be sure to not overmix).

Heat up your skillet and spray with nonstick spray. Using a 1/4th cup measure, scoop the batter onto the hot skillet. Cook for 2 to 3 minutes per side or until you see bubbles forming in the batter and flip. Serve warm with butter or maple syrup and more coffee or juice.

I served mine with some turkey bacon and apple juice. They were absolutely divine! Spongey and soft! You've got to try these for breakfast some day!
