I can't believe it's Thursday!!!! I have been waiting so long for this moment! My TGIT Withdrawal is officially over! Yes that's right, today is the return of two of my favourite TV Shows, Scandal and How To Get Away With Murder! Will you be watching? I know I will. And if I remember to, I'll be live tweeting during the show. Sometimes I just get so caught up in the show that I forget to tweet. But I love to read other people's reactions on Facebook and Twitter! I haven't decided on my in-show snack yet but if time runs out on me, I'm okay with popcorn. What's your favourite in-show snack? If you want, you could even use this recipe!
I've always said that breakfast should be exciting. Afterall, it's the first thing you will eat for the day. I've fallen into a bit of a rut lately with my breakfast foods, sticking mostly to oats and grits out of convenience. But last night after watching Empire (Don't you just love that show?) I made this so that I wouldn't have to rush in the morning. I used a 6x6 baking pan because I like deep dish bars. Can you believe they're already gone? I didn't use salt because I knew I wouldn't need to preserve them. These bars are a cross between a granola bar and a banana bread/blondie and they are a great way to satisfy a little carb craving without breaking the bank or your belt. Are you in the kitchen yet?
Banana Oat Breakfast Bars

Ingredients
2 medium bananas (spotted ones that are a little past their prime)
1/4 cup applesauce
1/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla
1/2 teaspoon salt (only useful if freezing
1/2 teaspoon baking soda
1 cup whole wheat flour
1 cup old fashioned oats
1 tablespoon peanut butter, optional
1/2 cup almond milk
DIRECTIONS:
Preheat oven to 350°F. Spray an 6x6” or 8x8” pan with nonstick cooking spray. (Line it with foil first for easy removal, if desired.)
Place bananas in a large bowl. Mash them with a fork or potato masher until just small chunks remain. Stir in applesauce and brown sugar with a wooden spoon or silicone spatula. Add egg, vanilla, and salt, and stir until combined. Stir in baking soda. Add flour and oats and stir until mixed, some lumps will remain. Spread in prepared pan.
Bake for 18-22 minutes until browned around the edges and not jiggly in the center. Cool completely. Slice into bars.
Optional (but strongly recommended) drizzle: melt peanut butter in a small microwave safe bowl (like a mini ramekin). Carefully tilt or spoon and drizzle over bars.
Enjoy within 2 days or freeze for up to one month, since they don’t last very long on the counter. Although I don't know how you could resist eating all at once!
