Cheesy Bacon Roasted Potatoes

Dinner today got a little....cheesy dare I say. Potatoes are awesome and versatile. Now that I’ve mastered making fries at home, I thought I could try this little bake. I was originally inspired by Little Spice Jar’s rendition but decided to replace the ranch with bacon. Why? Because bacon makes everything better. That and I was too lazy to make the ranch dressing. I also didn’t think it would make a good pairing, especially when I’m watching my weight. And when I originally saw the recipe, I thought bacon was already on it. Like why wouldn’t you put bacon on it? Am I overselling the awesomeness of bacon? Try this little recipe is judge for yourself!
Cheesy Bacon Roasted Potatoes

INGREDIENTS
2¼ pounds russet potatoes, thoroughly washed and chopped into ¾ inch dice
3 tablespoons olive oil
3 teaspoons fresh herb mix
½ teaspoon garlic powder
salt + pepper
¾ cup shredded sharp cheddar cheese
2 scallions, greens only, chopped
Bacon bits
INSTRUCTIONS
Wash the potatoes in a large bowl cover with cold water before cutting them pat dry with a paper towel.
Position a rack in the centre of the oven and preheat the oven to 425ºF. Grease a large rimmed baking pan with non-stick spray.
Toss the potatoes in 3 tablespoons of olive oil. In a small bowl, combine the garlic, fresh herbs and a big pinch of salt and pepper. Sprinkle the seasonings on the potatoes, tossing as you go to ensure they're all seasoned.
Spread in a single layer into the baking pan, bake for 40-55 minutes, tossing half way in between using a thin metal spatula. When the potatoes are done, top with shredded cheese. Let the cheese melt in the oven for another 1-2 minutes. Top with scallions and desired amount of bacon bits. Serve immediately.
