Bistro Salad with Poached Egg

May I just say that I am loving not working for this week! I quit my job two weeks ago and Friday was my last day. I can't say that I'm sad to go as towards the end there was a lot of unnecessary drama that I usually got blamed for.Now that it's all behind me, I can focus on relaxing for my new job that I start next week. I'm not sure what to expect but I'm hoping it's a lot better.With my week off, I planned on trying new recipes, and hopefully sewing something considering it's been a LONG time! Today's recipe was an absolute impulse but I hope to try it again VERY soon! It's Quick and Easy so that's a plus!So, whether you're looking for lunch or just a starter, this French-inspired classic is sure to hit the spot!
Bistro Salad With Poached Egg
Yields 1 serving
Ingredients:
1 cup lettuce
1 slice tomato, diced
1 slice turkey bacon, fried
1 poached egg
1 slice whole wheat bread, toasted (I ran out and used a taco shell)
Kraft Raspberry Poppyseed Everything dressing
A pinch of salt and pepper
Directions:
Arrange lettuce on plate with tomatoes and turkey bacon. Toast bread and fold in half next to salad. Top salad with a light drizzle of the dressing, and then the poached egg. Enjoy!
****If you don't know how to poach an egg, it's simple. Get a deep saucepan and fill it with water. On medium heat, crack an egg and gently ease it into the pot. It should only take about two minutes. The yolk would still be a little runny.****
